When you compose a new message, there should be an option just below the 
'Attach a file' link 
called either 'Plain Text' (with a heap of rich-text formatting options) or 
just 'Rich formatting' (with 
no other formatting icons).

If you see the formatting icons, then you're using rich-text. Clicking the 
'Plain text' option should 
cause a warning message about losing formatting.

If plain text Gmail messages don't make it through to the DML unscathed, then 
there may not be 
any compatible Gmail options.
