Being an extremely large herd animal (like an elephant) is its own best
defense against predators; juveniles and sickly animals not withstanding.
You don't need to hide when you're too big to be messed with by most
predators in your vicinity.
Camouflaged "prey" animals and predators use camouflage to hide from hunters
or hide from prospective prey, respectively. I can certainly imagine
smaller "prey" dinosaurs and predatory dinosaurs having camouflage
coloration.
