I assume the term 'stag' is used as a reference to the idea that ceratopians didn't head-butt or ram their opponents, but rather engaged in tussling matches with horns locked (much like deer).


(And if you ask me, the terms 'bull', 'cow' and 'calf' are already over-used in extant species; bovines, elephants, seals, etc.)
